Are you still baking cookies on Christmas Eve? Maybe you haven’t made any yet and you need a quick and easy recipe. I have a recipe that can be changed up in so many ways. Depending on the ingredients you have on hand or your mood you can have several different types of cookies ready for Christmas with very little effort.
The secret, magical ingredient is cake mix. Keep a few boxes in your pantry or grab a few next time you are at the store. Any flavor of cake mix can be turned into cookie dough and the flavor and mix in combinations are endless.
I’ll show you 3 variations that you can whip up in not time. You can turn on your favorite Christmas song and have your dough ready by the end of the song. It’s that easy. Let’s go!
Cake Mix Cookies
1 box cake mix (any flavor)
1 stick softened butter (softening at room temp is best, but you can soften very carefully in the microwave or under a hot glass, or even in a steamy dishwasher, after it has washed during the dry cycle)
2 eggs room temp (not entirely necessary, but helpful)
1 Cup mix ins (such as chocolate chips, nuts, dried fruit, candies)
Note: If using white cake mix use 3 egg whites instead of 2 whole eggs to help keep the white color.
Preheat oven to 350°F. Beat butter in mixer bowl.
Add eggs and beat until combined.
Add Cake mix and beat until a dough is formed.
Then add mix ins and stir until evenly distributed.
Portion out dough into 1 inch balls. Bake on a parchment lined cookie sheet for 8-10 minutes.
Let cool for 1 minute on the cookie sheet and then transfer to a cooling rack until completely cooled.
I box of cake mix will make 3-4 dozen cookies depending on whether you add mix ins or just roll the cookies in sprinkles.
