Memorial day is right around the corner and for many people it means a picnic to mark the beginning of summer. Lucky for you I put together an easy menu, so you can do all the prep and at least half the cooking before guests arrive, so you can enjoy your picnic instead of slaving away in your kitchen.

If guests offer to bring anything you can have them bring bottled water, beer, chips, veggies and dip or other party items, such as chairs or fireworks. You could also hand off the fruit salad or have someone bring the ingredients for the margaritas or a kiddie cocktail.
The point is that you don’t want guests to go to a lot of trouble. You want this to be laid back for them and this menu is easy to pull off so it will be a laid back picnic for you too.
Timeline
The week of the picnic shop for picnic supplies and ingredients.
The day before prep baked beans, ice cream cake/eclair cake and bake corn bread.
Day of picnic bake the beans, cook the ribs, set up for picnic. Prepare margaritas as guests arrive.
The only active time during the picnic will be making margaritas and putting out the food and the rest of the time you can be enjoying your guests.
