Ooey gooey microwave brownie in a mug. Do I even need to say anything else? Mug cakes and cookies are all over Pinterest and to be honest I usually find them to be dry with a weird texture. The other night I really wanted a brownie and my husband Mike never turns down a brownie, so I decided to try making a mug brownie.
I thought about the ingredients needed to make a pan of brownies and how to tweak the ingredients list and method to make it work in the microwave. I read a bunch of recipes to get an idea for ingredient amounts and noticed that all of the recipes required a lot of sugar. I decided to reduce the sugar and came up with a method that I thought would work.
On to the recipe testing. I mixed up the ingredients in a specific order and popped the mug into the microwave. The cook time took a little trial and error. I started with 30 seconds and worked my way up to a total time of 1 minute 15 seconds.
Now for the most important step. Tasting. I added a scoop of vanilla ice cream and then we dug in. Amazing! Chocolatey, gooey, warm and comforting. It was the perfect amount of baked outside and gooey center. You know how you want to eat brownies as soon as they come out of the oven, but can’t because they will just fall apart? This recipe makes it possible to eat a freshly baked, still warm brownie. What could be better?

Recipe
1 TBSP Butter
3 tsp water
1/4tsp vanilla extract
6 tsp sugar
6 tsp flour
4 tsp cocoa powder(dark is preferred)
1TBSP mini chocolate chips
Pinch of salt
Spray mug with cooking spray, and add butter. Melt butter in the microwave for 15-30 seconds. To melted butter add water. Then add vanilla. Add sugar, then mix with a fork or spoon. Add flour and salt. Then add cocoa powder and mix until combined. Pour in chocolate chips and roughly mix, no need to fully incorporate. Microwave on high for 30 seconds then remove from microwave and tilt mug. If the batter is still liquid return to microwave and cook for 15 seconds and check again. Continue cooking and checking until just cooked. Top with ice cream, whipped cream or a splash of milk.
