Éclair Cake

Éclair cake, sounds fancy doesn’t it? Don’t let the name fool you. This dessert is perfect at a summer picnic as well as at a dinner party. The best part is that it is easy to put together and is better if made the day before.

This is a great recipe for kids to make. It doesn’t require the use of the stove or oven, so if they can read and follow directions they can make this dessert. Though it is easy to make, it doesn’t look like it was easy to make, once sliced it looks like a beautiful layer cake. You can choose whether or not to let your guests in on the secret.

This was a dessert that my mom used to make when I was a kid. My brother, sister and I all loved it and it was easy for her to whip together to take to a pot luck or to serve to guests. I don’t know where she learned how to make it, but as a kid I thought she was brilliant. Making graham crackers soft like cake was some sort of magic. The dessert that resulted from a few simple ingredients was very impressive.

2 boxes Graham Crackers

3 boxes Instant Vanilla Pudding Mix

1 Tub of Chocolate Frosting

Milk for pudding (not skim)

Line a 9×13 baking pan with a single layer of graham crackers, breaking crackers as necessary to make them fit.

Make one box of pudding using the instructions to make pie filling, usually 1 ¾ cups milk instead of 2 cups.

Pour pudding over graham cracker layer and spread smooth.

Layer with more graham crackers covering all of the pudding.

Then make the second box of pudding and pour over crackers. Repeat with another layer of crackers and the last box of pudding. Cover the last layer of pudding with a final layer of graham crackers. Take the lid and the foil seal off of the tub of frosting and microwave for 30 seconds. Stir melted frosting to make sure it is completely melted.

Pour melted frosting over graham crackers and smooth with a rubber spatula.

Cover with aluminum foil or plastic wrap and refrigerate for at least four hours , but preferably over night. Serves 12-16
